Spring has officially sprung on the Central Coast. The vines are all about 4-6” out for the year, and we’re getting things prepped around the winery for another season at Field Recordings.
This is also the season we like to pop our freshest sparkling wine selections from the past couple years to share with everyone. We want all your fridges locked and loaded with bubbles to celebrate all those three-day weekends.
We’re now completely farming two small vineyards on the SLO Coast dedicated to crafting all of our sparkling libations. For years, one of these properties — the Carroll Vineyard — has been the source for our tasting room’s favorite Pét Nát, MONTE. MONTE is a homage to our landlord Howard’s monthly card game that he hosts in the barn on site. I’m not really sure why we call it a poker night, since all Howard and the barn boys want to play is Two Card Monte.
You’ll see the newest vintage of MONTE return this fall, but for the spring, we mixed things up a bit. We took a small amount of the Carroll Vineyard fruit and combined it with one of our other mainstay wines, Dry Hop Pet Nat. The resulting Dry Hop Monte is on another level. This isn’t just a fermentation trick in the cellar, this is another worldly wine experience. Only 143 cases of this gem exist.
Take this one to the Father’s Day BBQ, and it’s a guaranteed hit. If you really want to impress all your family and friends, make some ice cubes out of POG juice for a super simple and refreshing sparkling cocktail. Two cubes dropped in a glass will blow your minds.
Our second offering is from our latest sparkling vineyard, Landside. I planted this experimental vineyard a few years back, with 5 new clones of Pinot Noir imported from the Champagne region of France. These cultivars have lived up to the expectations. You can really see why it took the French government 20+ years to add these to the approved collection of clones for making the world’s finest sparkling Pinot Noir. A mere 63 cases of the 2024 Landside Pet Nat were produced. This one will go fast.
Look for more Carroll and Landside in the near future, as we’ve fully expanded on our methode champenoise program. The team has fully gotten the bubbles bug, and it’s something we’re super proud of. Making sparkling wine is so much more dynamic than making table wines, and it gives our team the biggest challenges year in and year out. Everything has to be so precise, and we’re constantly tasting barrels, trying to envision what they might taste like three years down the road once the bubbles are properly incorporated.

Sparkling Chardonnay fermented with hops
The perfect Pét Nat is kismet. The wine must be captured in bottle at just the right level of natural sugar, making it perfectly carbonated upon release. Fate lent us a hand with a few select bins from Carroll Ranch, home to some of the oldest vines in Edna Valley. Planted with cuttings from the old Rancho Tepusquet in Santa Maria and tended by the notorious barn boys of Edna for decades, these vines are truly something special in making sparkling wine.

Landside

100% Pinot Noir
Landside is our experimental Pinot Noir vineyard on the western edge of the Edna Valley along the SLO Coast. Planted with 5 proprietary clones of Pinot Noir that were selected specifically for their acumen in making sparkling wine. We take a small portion of the fruit and let it ripen to the perfect level of sugar and acid for pétillant naturel.
